Spinach Tortellini Soup
Cook Time: 15 minutes Serves: 4
Ingredients:
- 6 cups low-sodium chicken stock (or vegetable stock)
- 1 (9oz) package fresh or frozen cheese tortellini
- 1 (12oz) bag Simple Beginnings Savoy Spinach - chopped
- 1 (14.5oz) can Italian diced tomatoes (with juices)
- 1 teaspoon fresh chopped basil (or 1/2 teaspoon dried basil)
- 1 teaspoon fresh chopped oregano (or 1/2 teaspoon dried oregano)
- Salt and pepper to taste
- 1/4 cup freshly grated parmesan cheese
Directions:
- Heat chicken stock in pan to simmer.
- Add the next six ingredients and stir. Bring to a slow boil and then simmer for 15 minutes (or until tortellini is cooked).
- Ladle into bowls and top with grated parmesan cheese.
