Spinach Bread Stuffing
Time: 1 hour, 10 minutes
Serves: 8-10
Ingredients:
- 12 oz unsalted butter (1 1/2 sticks)
- 1 tablespoon olive oil
- 1 large onion - diced
- 3 celery stalks - diced
- 1/4 cup fresh parsley - chopped
- 2 tablespoons fresh sage - chopped
- 2 tablespoons fresh thyme - chopped
- 1 (10oz) bag Simple Beginnings Savoy Spinach - chopped
- 2 teaspoons salt
- 1 teaspoon pepper
- 1 loaf of bread - cut into cubes (use your favorite bread)
- 1/2 cup dried cranberries
- 2 large eggs
- 1 cup chicken stock
Directions:
- Preheat oven to 350 degrees F.
- In a large sauté pan or pot, melt the butter and olive oil. When heated, add the onions and celery. Sauté for 5 minutes. Add the parsley, sage, thyme and spinach. Cook for an additional 5 minutes on medium heat. Season with salt and pepper.
- While the vegetables are cooking, place cubed bread on a sheet pan and bake in oven for approximately 10 minutes, until it hardens.
- Add the toasted bread cubes and the dried cranberries into the cooked vegetable mixture. Mix together well and cool slightly.
- In a separate bowl whisk together the eggs and broth. Add the egg mixture to the stuffing and mix well.
- Place stuffing in a large buttered casserole dish and bake for 45-50 minutes until crusty on top.
This is a great side dish for any holiday table.
