Cornish Hens stuffed with Greens and Brown Rice

Total Time: 1 hour and 45 minutes     Serves: 4

Ingredients:

  • 1 cup brown rice
  • 1 (9oz) bag Simple Beginnings Baby Sauté Blend
  • 4 Cornish Game Hens
  • 4 tablespoons olive oil
  • Salt and pepper - to taste

Directions:

  • Cook brown rice according to package directions. Fluff with fork and cool.
  • Preheat oven to 375 degrees.
  • Heat 2 tablespoons olive oil in sauté pan and add the baby greens. Season with salt and pepper and sauté for 2 to 3 minutes. Mix greens together with cooked rice.
  • Rub the remaining 2 tablespoons of olive oil on the hens and season with salt and pepper. Stuff each hen with the greens and rice mixture, making sure you don’t overstuff (extra stuffing can be served alongside the hens).
  • Roast hens for approximately 1 hour or until the thermometer inserted into the thickest part of the hen registers 165 degrees F. Remove from oven and tent with foil for ten minutes to let it rest.

Serve with a Baby Arugula and pear salad.
