Chicken with Kale and Peppers
Time: 40 minutes
Serves: 4
Ingredients:
- 3 boneless skinless chicken breasts (cut in 2 inch cubes)
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 garlic cloves - minced
- 4 tablespoons olive oil
- 1 small onion - chopped
- 1/2 red pepper - sliced
- 1/2 orange pepper - sliced
- 1/2 yellow pepper - sliced
- 1 (9oz) bag Simple Beginnings Baby Kale
Directions:
- Combine chicken cubes, cumin, salt, pepper and garlic in a bowl and mix together.
- Heat 2 tablespoons olive oil in a large sauté pan and add chicken. Cook for 5-7 minutes turning to brown all sides. Remove chicken from pan.
- To the same pan, add 2 tablespoons of olive oil, add onion and cook for 5 minutes. Add peppers and continue to cook for another 10 minutes. Add the kale, mixing together and cook another 5 minutes. Season with salt and pepper to taste.
- Combine chicken and vegetables together and enjoy!
