Celery Sticks with Spinach and Roasted Red Pepper Dip
Ingredients:
- 8oz. light cream cheese
- 1/2 cup freshly grated parmesan cheese
- 2 cups packed spinach leaves – chopped small
- 1/2 cup roasted red pepper - chopped small
- Simple Beginnings Celery Hearts – washed and cut into sticks
Directions:
- Cook the chopped spinach in boiling water for 3 minutes. Drain, cool and squeeze out any liquid.
- Mix together the first 4 ingredients well. Refrigerate for a couple hours until well chilled.
- Serve dip alongside crisp Simple Beginnings celery sticks!
