Baby Kale Crostini

Total Time: 15 minutes 
Servings: 6-8 as an appetizer

Ingredients:

  • 1 loaf Ciabatta bread (French bread can be used as a substitute)
  • 4 tablespoons olive oil divided
  • 1 clove garlic - minced
  • 1 (9oz) bag Simple Beginnings Baby Kale
  • Salt and pepper to taste
  • 1/2 teaspoon hot pepper flakes
  • 1/4 cup shaved parmesan cheese

Directions:

  • Preheat oven to 350 degrees.
  • Slice bread into half inch slices on the diagonal. Place slices on a cookie sheet pan and brush with 2 tablespoons of the olive oil (reserving the other 2 tablespoons). Bake for approximately 8 minutes or until lightly toasted.
  • Heat the remaining 2 tablespoons of olive oil in a sauté pan. Add the garlic and sauté for 1 minute. Add the kale and hot pepper flakes, season with salt and pepper to taste, and sauté for 2 to 3 minutes.
  • When the bread is lightly toasted, top with the sautéed kale. Add the shaved parmesan and serve.
