Baby Kale Crostini
Total Time: 15 minutes
Servings: 6-8 as an appetizer
Ingredients:
- 1 loaf Ciabatta bread (French bread can be used as a substitute)
- 4 tablespoons olive oil divided
- 1 clove garlic - minced
- 1 (9oz) bag Simple Beginnings Baby Kale
- Salt and pepper to taste
- 1/2 teaspoon hot pepper flakes
- 1/4 cup shaved parmesan cheese
Directions:
- Preheat oven to 350 degrees.
- Slice bread into half inch slices on the diagonal. Place slices on a cookie sheet pan and brush with 2 tablespoons of the olive oil (reserving the other 2 tablespoons). Bake for approximately 8 minutes or until lightly toasted.
- Heat the remaining 2 tablespoons of olive oil in a sauté pan. Add the garlic and sauté for 1 minute. Add the kale and hot pepper flakes, season with salt and pepper to taste, and sauté for 2 to 3 minutes.
- When the bread is lightly toasted, top with the sautéed kale. Add the shaved parmesan and serve.
