Arugula and Celery Winter Salad
Time: 10 minutes Serves: 4
Ingredients:
- 1 (5oz) package Simple Beginnings Baby Arugula
- 1 celery stalk - thinly sliced at an angle
- 1/2 cup chopped walnuts - toasted
- 1 pomegranate - opened with seeds removed (see note)
- Oil and Vinegar
- Salt and pepper to taste
Directions:
- Mix together the first four ingredients and simply toss with your favorite oil and vinegar, season with salt and pepper to taste.
- Note: Pomegranates are in full season, delicious AND good for you.They are also easy to open. Run a knife around the crown of the fruit (top section) to score the skin for removal. Pull the top off like a lid so that the seeds are exposed. Using the natural sections as a guide, score the skin along the sides, being careful not to cut through to the seeds. Place your thumbs along the top and open the fruit by gently pulling the sections down and apart. Remove the seeds and enjoy.
