Spinach Tortellini Soup

Cook Time: 15 minutes   Serves: 4


  • 6 cups low-sodium chicken stock (or vegetable stock)
  • 1 (9oz) package fresh or frozen cheese tortellini
  • 1 (12oz) bag Simple Beginnings Savoy Spinach - chopped
  • 1 (14.5oz) can Italian diced tomatoes (with juices)
  • 1 teaspoon fresh chopped basil (or 1/2 teaspoon dried basil)
  • 1 teaspoon fresh chopped oregano (or 1/2 teaspoon dried oregano)
  • Salt and pepper to taste
  • 1/4 cup freshly grated parmesan cheese


  • Heat chicken stock in pan to simmer.
  • Add the next six ingredients and stir. Bring to a slow boil and then simmer for 15 minutes (or until tortellini is cooked).
  • Ladle into bowls and top with grated parmesan cheese.
