Spinach Bread Stuffing

Time:  1 hour, 10 minutes
Serves:  8-10

Ingredients:

  • 12 oz unsalted butter (1 1/2 sticks)
  • 1 tablespoon olive oil
  • 1 large onion - diced
  • 3 celery stalks - diced
  • 1/4 cup fresh parsley - chopped
  • 2 tablespoons fresh sage - chopped
  • 2 tablespoons fresh thyme - chopped
  • 1 (10oz) bag Simple Beginnings Savoy Spinach - chopped
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 1 loaf of bread - cut into cubes (use your favorite bread)
  • 1/2 cup dried cranberries
  • 2 large eggs
  • 1 cup chicken stock

Directions:

  • Preheat oven to 350 degrees F. 
  • In a large sauté pan or pot, melt the butter and olive oil. When heated, add the onions and celery. Sauté for 5 minutes. Add the parsley, sage, thyme and spinach. Cook for an additional 5 minutes on medium heat. Season with salt and pepper. 
  • While the vegetables are cooking, place cubed bread on a sheet pan and bake in oven for approximately 10 minutes, until it hardens.
  • Add the toasted bread cubes and the dried cranberries into the cooked vegetable mixture. Mix together well and cool slightly.
  • In a separate bowl whisk together the eggs and broth. Add the egg mixture to the stuffing and mix well.
  • Place stuffing in a large buttered casserole dish and bake for 45-50 minutes until crusty on top.

This is a great side dish for any holiday table.
