Slow Cooker Spinach and White Bean Soup

Prep Time: 10 minutes  Cook time:  5 to 7 hours on low.  2 ½ to 3 1/2 hours on high.
Serves:  10

Ingredients:

  • 2 (32oz) containers vegetable broth
  • 2 (15.5oz) cans great northern white beans
  • 1 (28oz) can San Marzano crushed tomatoes
  • 1 cup uncooked brown rice
  • 1 large onion - diced
  • 1 tablespoon fresh basil (or 1/2 tablespoon dried basil)
  • 1 tablespoon fresh oregano (or 1/2 tablespoon dried oregano)
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 (10oz) bag Simple Beginnings Savoy Spinach – rough chopped or hand torn
  • Freshly grated Parmesan or Romano cheese for garnish

Directions:

  • Add everything into your slow cooker and let the magic begin! This is a large amount of soup to share or freeze for another night.
