Slow Cooker Spinach and White Bean Soup
Prep Time: 10 minutes Cook time: 5 to 7 hours on low. 2 ½ to 3 1/2 hours on high.

Ingredients:
- 2 (32oz) containers vegetable broth
- 2 (15.5oz) cans great northern white beans
- 1 (28oz) can San Marzano crushed tomatoes
- 1 cup uncooked brown rice
- 1 large onion - diced
- 1 tablespoon fresh basil (or 1/2 tablespoon dried basil)
- 1 tablespoon fresh oregano (or 1/2 tablespoon dried oregano)
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 (10oz) bag Simple Beginnings Savoy Spinach – rough chopped or hand torn
- Freshly grated Parmesan or Romano cheese for garnish
Directions:
- Add everything into your slow cooker and let the magic begin! This is a large amount of soup to share or freeze for another night.
