Celery Sticks with Spinach and Roasted Red Pepper Dip

  • 8oz. light cream cheese
  • 1/2 cup freshly grated parmesan cheese
  • 2 cups packed spinach leaves – chopped small
  • 1/2 cup roasted red pepper - chopped small
  • Simple Beginnings Celery Hearts – washed and cut into sticks


  • Cook the chopped spinach in boiling water for 3 minutes. Drain, cool and squeeze out any liquid.
  • Mix together the first 4 ingredients well. Refrigerate for a couple hours until well chilled.
  • Serve dip alongside crisp Simple Beginnings celery sticks!
