Spring Mix Salad with Grilled Ciabatta

Ingredients:

  • Ciabatta bread or loaf of any Italian bread
  • 2 tablespoons olive oil
  • 1 (5oz) Simple Beginnings Spring Mix
  • 1/2 cup shelled pistachios 
  • Lemon Dijon Vinaigrette (recipe below)
  • Shaved Parmesan cheese

Directions:

  • Slice the ciabatta bread into 1/2 inch thick slices, drizzle each slice with olive oil and grill for a couple of minutes on each side (or place the bread slices in a 400 degree oven on a cookie sheet to toast).
  • In an oven or in a dry pan over medium heat, toast the pistachios until you smell the aroma. Either method will only take a minute.
  • To plate: place the toasted bread in the center of the plate, top with Simple Beginnings Spring Mix and add pistachios. Drizzle the vinaigrette and combine together. Top salad with shaved parmesan cheese. 

Lemon Dijon Vinaigrette:

  • 1 freshly squeezed lemon
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 small shallot - finely chopped
  • 1 teaspoon Dijon mustard
  • 3/4 cup olive oil

Add lemon juice, salt, pepper and Dijon mustard to a blender or whisk until blended. Add olive oil in a slow, steady stream until completely smooth and emulsified.
