Spinach and Turkey Bacon Quiche

Ingredients:

Dough:

  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 cup cold water
  • 1/4 cup olive oil

Quiche filling:

  • 12oz. turkey bacon
  • 6 large eggs
  • 1 1/2 cups heavy cream
  • Salt and pepper to taste
  • 2 packed cups of Simple Beginnings baby spinach - chopped
  • 1 cup Swiss cheese - shredded
  • 1/2 cup asiago cheese - shredded

 

Directions:

  • Preheat oven to 375 degrees.
  • Prepare the crust. Whisk together the water and oil in a large bowl. Add the flour and 1/2 teaspoon salt, mix well and form into a ball. Wrap the dough in plastic wrap and place in the refrigerator for a half hour. (If you want to save time, you can use a refrigerated pie crust.)
  • In the meantime, cook the turkey bacon according to package directions. Drain, cool and crumble or chop into small pieces.
  • Combine the eggs, heavy cream, salt and pepper and mix together well.
  • Using a 9 inch pie pan, press the dough into the pan and up the sides to form a bottom crust (or use a prepared pie crust). Layer in the spinach, cheese and bacon. Pour in the egg mixture.
  • Bake for 45 minutes.

This recipe is well worth the work! Delicious and satisfying.
