Chicken with Kale and Peppers

Time:  40 minutes
Serves:  4

Ingredients:

  • 3 boneless skinless chicken breasts (cut in 2 inch cubes)
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 garlic cloves - minced
  • 4 tablespoons olive oil
  • 1 small onion - chopped
  • 1/2 red pepper - sliced
  • 1/2 orange pepper - sliced
  • 1/2 yellow pepper - sliced
  • 1 (9oz) bag Simple Beginnings Baby Kale

Directions:

  • Combine chicken cubes, cumin, salt, pepper and garlic in a bowl and mix together.
  • Heat 2 tablespoons olive oil in a large sauté pan and add chicken. Cook for 5-7 minutes turning to brown all sides. Remove chicken from pan.
  • To the same pan, add 2 tablespoons of olive oil, add onion and cook for 5 minutes. Add peppers and continue to cook for another 10 minutes. Add the kale, mixing together and cook another 5 minutes. Season with salt and pepper to taste.
  • Combine chicken and vegetables together and enjoy!
