Butternut Squash Gorgonzola Pizza

Time: 45 minutes    Serves: 4

Ingredients:

  • 1/2 package Simple Beginnings Butternut Squash - cut into 1 inch pieces
  • 3 tablespoons olive oil
  • Salt and pepper to taste
  • 1 packed cup Simple Beginnings greens - Baby Kale, Baby Spinach, or Saute Blend
  • 1 pound prepared pizza dough
  • 1/2 to 1 cup gorgonzola cheese - crumbled (according to taste)
     

Directions:

  • Preheat oven to 450 degrees F.
  • Place cubed butternut squash on a sheet pan, drizzle with two tablespoons of olive oil and season with salt and pepper. Roast in oven for 30 minutes or until tender. Remove pan from oven and cool. Once cooled, add the greens to the squash and toss together.
  • Roll out pizza dough. Brush crust with one tablespoon of olive oil. Arrange the butternut squash and greens on the dough, spread on the gorgonzola cheese, season with salt and pepper, lightly drizzle with olive oil. Place in a 450 degree oven for 10-12 minutes or until the bottom of the crust is cooked.
