Baby Kale, White Bean and Sausage Soup

Ingredients: 

  • 2 tablespoons olive oil
  • 1 medium onion - chopped
  • 3 cloves of garlic - minced
  • 3 lean turkey sausages
  • 2 tablespoons fresh herbs or 2 teaspoons dried herbs (such as rosemary, thyme and oregano)
  • 1 (9oz) bag Simple Beginnings Baby Kale
  • 4 cups vegetable or chicken broth
  • 2 (15.5oz) cans cannellini beans - drained and rinsed
  • 1 (14.5oz) can diced tomatoes
  • 1/2 teaspoon red pepper flakes
  • Salt and pepper to taste

Directions:

  • In a soup pot, heat olive oil over medium heat. Add onion and sauté for 5 minutes. Add garlic and sauté for another minute. 
  • While onion is sautéing, prep the turkey sausage. Remove the casing and chop the sausage into small pieces. Add the sausage to pan with the sautéed onions and garlic. Continue to sauté until sausage is cooked through. 
  • Add the herbs and baby kale and stir often until kale is wilted. 
  • To the pot, add 3 cups of the broth, 1 1/2 cans of cannellini beans, diced tomatoes and red pepper flakes. Simmer for 5 minutes. 
  • In a food processor or blender, blend together the remaining 1 cup of broth and ½ cup of beans until smooth and add to the pot. Season with salt and pepper to taste. Simmer for 15 minutes.
